During our interview with Olga Sagan, owner of Piroshky Piroshky, she said, "Can you imagine dropping everything in your forties? New language, new country. You have your two teenagers. They had to immigrate from the Soviet Union back then through Italy to Seattle. Zina was a prominent attorney in Tallinn, and she moved here to clean hotel rooms, just like any immigrant story. Vladimir, her husband, he was a Baker. So, that's how there is a baking background right there. So they did what you now call crowdfunding. On October 24, 1992, they opened their door and started bringing that Eastern European, Estonian, Russian, Ukrainian cuisine here to Seattle."
