Dylan Randolph, owner of Bonnie B’s Peppers, approaches pickling with an emphasis on preservation rather than embellishment, allowing the produce to retain its natural character. His vinegar-first method is informed by his mother’s recipes and a childhood spent pickling in Ohio, where generational flavors were developed through balance and restraint. 


At the Pike Place Market, Bonnie B's seasonal harvests are processed from farm to jar in under 24 hours, prepared by hand in small batches. That same approach carries into his take on the Seattle Dog, where preserved peppers are paired with the PNW classic at the stall.
